Last week we had three days of classes cooking our Mediterranean – Touch of Spice. All those wonderful flavours of the region; this time we featured Morocco, Egypt, Spain, Italy, Greece and the Middle East. The flavours are robust and intense, the textures varied and the aromas rich and heady. At home you can cook these dishes with as much flavour and chilli heat as you wish; in class we flavour the dishes on the side of caution!

So all week, my headspace was in this region, of the Mediterranean. It was perfect timing to receive a lovely phone call from Edwina. Edwina is a Melbournian living in Marrakesh.
