Italians enjoy their cooking and eating is a festive, fun affair accompanied by music and laughter. Italian food features good quality extra virgin olive oil, sensational cheeses, home-made pastas and gnocchi, tomatoes, olives, garlic, basil, rosemary, sage and lemons. In Italianicious we present dishes, requiring various culinary skills; we always include pasta making, such a joy, loads of fun to make, gives tremendous satisfaction, plus is delicious to eat.

By the way, there is now a Partners and Friends Class Luncheon available, without the cooking class. This is available for guests of people attending the Cooking on the Bay cooking classes, and who do not want to cook!
Guest arrival time is around 12.30pm; we are usually finished then or nearly finished anyway. Your guest can relax with a glass of wine if we are still finishing off a dish or 2.
The cost for the lunch with wine is $145 per person. Email me to book and pay this Luncheon option.

‘Hello Tonya, just wanted to say thank you and let you know how much I enjoyed my day at ‘Cooking on the Bay’ and now putting into practice my new skills. This being the time of the year for catching up with friends and family I have been busy cooking and impressing them with new recipes. They have been very complimentary of the ricotta and spinach ravioli, home made now, and the Tagliata di Manzo which looks so great when bringing it to the table. Now reading my recipe books for more recipes. The cuttings from the Vietnamese mint have taken very well and the vanilla bean paste has improved the flavour of my shortbread…. From the Italianicious – Cooking with Passion at Kureelpa, On the Ridge Cooking School, Kureelpa, Sunshine Coast Hinterland, Queensland, held on Saturday 18th June, 2022.
Cooking at Kureelpa is always a little different to being in the Cooking on the Bay Kitchen. There are the same ingredients which make the day special – the lovely people who come to cook, the excellent dishes and the results are always delicious food. at Kureelpa there is the addition of a marvellous back-drop of Sunshine Coast blue sky and sunshine, the lush, green Image Flat valley, the Maroochydore and Mooloolaba skylines, the deep blue Coral Sea with a occasional huge, container ship moored off the coast, waiting to get into the Brisbane dock, and there is the Mt Coolum rock peeping out from behind the mountain. We cooked a great Italian Menu including a focaccia toped with braised fennel, toasted fennel seeds, crumbled feta and drizzled with pomegranate molasses, a true delight for the senses and a delicious flavour combination which we all loved! Basil pesto, tomato and anchovy salsa; luscious mushroom risotto, which was also made into arancini balls; our fresh pasta fettucce puttanesca is always amazing with its anchovy, gremolata topping and the dessert finale was a chocolate pastry crostata with the chocolate frangipane filling and raspberry jam served with lashings of whipped cream so sorry there were so few photos taken as we were busy, cooking, talking and eating!
