Cooking on the Bay is thrilled to announce we have guest chef, Cameron Matthews, the Executive Chef of the two-hatted Long Apron Restaurant in Queensland,to present a cooking class on Thursday, 26 September 2013.

The Long Apron is housed at Spicers Clovelly Estate in the Blackall Range town of Montville Queensland. Talented and well travelled, Cameron has established a stellar reputation at The Long Apron in the tranquil Sunshine Coast Hinterland, making it one of the finest dining experiences in Queensland. His ever evolving, intriguing and original take on fine dining is sometimes playful and quirky, but always skilful – a style that delivers a distinctive menu of local seasonal produce and a passion for his craft.

In a career spanning 22 years, Cameron has also been Executive Chef de Cuisine at Siggi’s Restaurant, Brisbane and Executive Chef of Restaurant Lurleen’s at Sirromet Winery in Mount Cotton – his early foray into creating an award winning dining destination.

John Lethlean, the esteemed restaurant reviewer for the Weekend Australian recently reviewed Cameron and The Long Apron Restaurant…

“The Long Apron is a place of archly modern, elegant, mature and regionally inspired food…The inevitable conclusion is that he – Cameron Matthews – is someone who thinks deeply about the textural elements of his dishes, of which there are many. Grains, charcoal dusts, wafers, gels, creams and curds all interlace with vegetables and proteins in an impressive manner. A mature and creative manner too. There is real originality here…Food that explores the boundaries, while still being anchored to the fundamentals of flavour and freshness, is just refreshing.”
John Lethlean – The Weekend Australian – June ’13.

The Long Apron was awarded Two Hats in 2012 and 2013 and Regional Restaurant of the Year for 2012 in the Queensland Good Food Guide. It also gained Two Hats in the Australian Good Food Guide and was laundered as one of Gourmet Traveller’s Top 100 Australian Restaurants (#94) gaining One Star and rating in Fiona Donnelly’s Top 10 Dishes of 2012 as well as gaining a slew of other regional and state awards. Cameron was a national finalist in this year’s Country Style Magazine’s “Country Chef of the Year” and has been a presenter at the Noosa International Food & Wine Festival and a strong supporter and advocate for the Sunshine Coast Hinterland region’s own iconic celebration – The Real Food Festival.

Cameron also operates a cooking school from The Long Apron Restaurant’s kitchen where he presents his classes to small groups. A former Victorian, Cameron began his career at one of the state’s top regional restaurants – Simone’s of Bright. Working alongside Patrizia Simone and her family, his foundation of putting soul into food – creating simple, sublime flavours – was laid.
Recently, Cameron’s cooking classes were mentioned on Channel Nine’s Morning Show as one of Australian Traveller magazine’s Top Cooking classes and he demonstrated one of his current dishes on the Today show to highlight the area’s fine produce. For Cooking on the Bay, his class will focus on Modern Italian.
