Serves 6
1 head of cauliflower
100ml cream
50g creamed cheese
100g grated tasty cheese
40g butter

Cut the cauliflower into florets and place in the steamer; steam until tender, about 8 minutes.  Transfer the cauliflower to the blender or food processor; add all the ingredients and purée until smooth.  Add a little more cream or a little water if necessary.  Add a few more grams of the creamed cheese too if you fancy.  Season well with sea salt and cracked pepper.  Set aside and keep warm.
